Ingredients (2 people)
- 5 g curry paste, red
- 4 wooden skewers
- 100 g Veganz Soy Medallions
- 4 tbsp soy sauce
- 4 tsp agave syrup
- 1 tbsp rice vinegar
- 4 tbsp water
- 2 garlic clove
- 2 tbsp sesame oil
- 120 g basmati rice
- 1 ½ lemon
- sesame seeds, black
- 10 g coriander, fresh
- 1 l vegetable broth
- 45 g peanut butter
- ¼ chili pepper

Got everything ready? Let's go!
Soak the wooden skewers in water for approx. 15 minutes. Heat the vegetable broth in a pan, add the medallions and allow to soak for 15 minutes.
Peel and grate the garlic. For the marinade, place 1/2 the garlic in a bowl and mix together with the curry paste, rice vinegar, water, and roughly half of the peanut butter, agave syrup, and soy sauce.
Drain the medallions and press out any excess liquid. Mix with the marinade and set aside for about 10 minutes. Cook rice according to the package instructions
Cut the lemon in half and squeeze out the juice into a container. Wash the coriander, shake off any excess water and pick off the leaves. Wash the chili, remove the seeds and finely dice.
Mix together the lemon juice and garlic with the remaining peanut butter, agave syrup, soy sauce, and water in a small bowl. Thread the medallions onto the skewers.
. Heat the sesame oil in a grill pan and fry the skewers on both sides for about 5-6 minutes until crispy.
Garnish the skewers with basmati rice, coriander, fresh chili, lemon wedges, sesame seeds, and enjoy with the saté sauce.
