Vegan gyros with tzatziki

With the Veganz Shredded Soy

Yummy gyros…mmm life is good! Get the recipe for these vegan gyros with tzatziki à la Veganz with the Veganz Shredded Soy.

Ingredients (2 people)
  • 120 g plant-based yoghurt
  • 150 g Veganz Shredded Soy
  • 400 ml vegetable broth
  • 3 tbsp soy sauce
  • ½ bell pepper, green
  • ½ bell pepper, red
  • ½ bell pepper, yellow
  • 1 tbsp agave syrup
  • 1 tsp sweet paprika powder
  • 1 tsp rosemary, dried
  • 1 tsp oregano, dried
  • 1 tsp thyme, dried
  • ½ cucumber
  • 2 garlic clove
  • 10 g mint, fresh
  • 10 g dill, fresh
  • 2 pita bread
  • 4 tbsp olive oil

Got everything ready? Let's go!
  1. Mix the broth and a bit of the soy sauce in a pan and bring to a boil. Remove from heat. Add the soy cutlets and let them soak in the liquid according to the package instructions. Remove the cutlets from the pan and squeeze out any excess liquid.

  2. Meanwhile, wash the peppers, cut them in half, remove the seeds, and slice into thin strips. To make the marinade, mix the remaining soy sauce with the agave syrup, paprika powder, rosemary, oregano, thyme, and a bit of oil. Mix the squeezed-out soy cutlets with the marinade and allow to marinate for at least 5 minutes.

  3. Heat a bit of oil in a pan and sauté the peppers for approx. 3 minutes. Season with salt. Remove from the pan and set aside.

  4. Wash and grate the cucumber, drain in a colander. Peel and grate the garlic. Wash the mint, shake off excess water and chop finely. Wash the dill, shake off excess water and chop finely. Mix together the plant-based yoghurt, cucumber, garlic, mint, and dill. Season with salt.

  5. Cut the pita bread into triangles. Heat a bit of oil in the pan, add the pita triangles and fry until golden brown on both sides. Season with salt, remove from the pan and set aside.

  6. Heat the remaining oil in the pan, add the marinated soy cutlets and fry until crispy. Add the bell pepper strips and sauté an additional minute.

  7. Serve the gyros with tzatziki and crispy pita triangles. Garnish with red onions, more mint and dill as desired – enjoy!
